Cod with Piennolo cherry tomatoes

INGREDIENTS

• 500 g of cod
• Piennolo del Vesuvio cherry tomatoes
• black olives
• salt
• pepper

METHOD

1. To prepare the cod with Piennolo tomatoes, start by removing them from the bunch in which they are kept and wash them delicately. Heat a round of extra virgin olive oil in a pan, add a clove of garlic and the cherry tomatoes cut in half.
2. Wash the cod, dry it and remove any thorns with the help of tweezers. Do not remove the skin because it will keep the cod more compact during cooking. Get some slices. When the cherry tomatoes have softened, add the cod and the pitted black olives. Season with salt. Cook for 15-20 minutes.
3. A round of fresh pepper and you can serve your cod with Piennolo tomatoes.
